Of all the gourmet products served in leading restaurants around the world, the truffle is undoubtedly one of the most highly-acclaimed, valued and respected by chefs.
Castilla y León, and more specifically Soria, has numerous areas where wild truffles grow and, above all, plantations in full production of black truffles. In fact, the province is home to the largest truffle-growing farm in the world, with more than 600 hectares of holm oaks in mycorrhizal relationships. In short, Soria and Castilla y León account for a significant percentage of total Spanish production. The properties of the soil and the altitude allow for the produce to ripen fully and develop a more pronounced taste and aroma.
In recent years the Junta de Castilla y León has sought to promote and publicise the mushroom products cultivated in Castilla y León to the professional sector in Spain and abroad, especially through the “Soria Gastronómica” International Congress of Mycological Cuisine of Castilla y León, the “Buscasetas” Days (mushroom picking), and the hosting of the “Cooking with Truffles” International Competition, which this year celebrates its third edition.
The competition will feature an impressive line-up of international chefs, supported and assisted by the chefs of the eight local restaurants sponsoring them. These restaurants will also offer dishes from the competition on their menus, so that they can be enjoyed by diners.
For the first time, the competition will feature a children’s jury that will award the Pequetrufa (kidsmushroom) prize and the panel of professional jurors will be made up of Spanish and international food experts, journalists, and chefs, as in previous editions.
The event will take place from 3 to 6 March 2022, with the competition session on the morning of Saturday 5 at the Palacio de la Audiencia Cultural Centre in Soria.
